Stobhach Gaelach or Irish Stew

Ingredients for six persons :
3 to 5 kg leg of lamb cut into cubes
2 tablespoons of butter
2 tablespoons of vegetable oil
2 cups of water
1 cup of broth
1 or 2 tsp of salt or to taste
¼ teaspoon of thyme crushed
4 med. size carrots clued into cubes
2 clones of garlic minced
4 med potatoes, quartered and peeled
8 small white onions, peeled
2 kg of fresh mushrooms, clued
1 cup of milk or Guinness
1/3 cup of flour
 
Materials : a casserole or alternatively a big pot
 
Preparation
Over medium heat, brown lamb in butter and oil in a large pot. Add water, broth, and seasonings : cover and simmer for 1 hour. Remove surface fat. Add potatoes, carrots and onions ; simmer until vegetables are tender for about 15 to 20 minutes. Add mushrooms and simmer for 5 minutes. Combine milk or Guinness and flour ; stir until snoot. Add to summering stew and simmer for about 1 minute, or until thickened. Taste and adjust reasoning's.
